At Rico taco we proudly serve authentic Mexican. Concocted by Chef Alejandro Torres Palacios, our cuisine is the real thing, enhanced by a colourful al fresco setting inspired by late Mexico City architect Ricardo Legoretta. While many mix up Mexican and Tex-Mex cuisines, we try and remain truer to Mexican food as found in San Luis Potosi, Alejandro’s home state. At the age of 16, Alejandro moved to Seattle to study. After finishing high school he went to culinary art school to become a Chef. He acquired experience by working in various restaurants in the Seattle area (Latin American, French, Italian, Spanish, etc.). He then decided to move to Vietnam to embrace the Executive Chef’s position at Khoi Thom, now renamed Rico Taco.
