Chef Alejandro Torres Palacios was born and raised in San Luis Potosi, Mexico. Even from a young age, he was exposed to a variety of local flavors and dishes from the markets and family meals – something that still inspires him to this day.
At 16, Alejandro decided to move to Seattle to study. After finishing high school, he enrolled in culinary arts school to pursue his dream of becoming a chef. He then went on to gain experience working in various restaurants around the Seattle area, covering everything from Latin American to French and Italian cuisine. Eventually decided to move to Vietnam to take on the role of Executive Chef at Rico Taco. It was here that he began bringing the authentic flavors of Mexico to Saigon.
